Buffalo Kidney

Kidneys are a unique experience when properly prepared. They have a unique taste and texture combined with a mouthfeel not quite as tender and fatty as liver, nor as chewy as gizzards. A fresh kidney has no odor and it is firm and shiny. While most kidneys come in pairs, for the buffalo kidneys – the pairs are split and each lobe is sold separately.
